The latest commissary, which is situated on a 6-hectare land in the Calmelray Industrial Park, is owned by Zenith Foods Corporation (ZFC), a subsidiary of Jollibee. Equipped with specially designed mechanized machinery, the production lines cater to various food items including marinated Chicken Joy, frozen patties and pies, breads, sauces, hotdogs, meat products, and dry blended goods. In addition to serving over 800 Jollibee and Greenwich stores, ZFC’s vision and mission are centered on providing delicious food and spreading the joy of eating to everyone.

It was impressive to see the level of organization in how everything was accommodated for us students. This prioritization of students is crucial for a company as it affects their overall image. In this tour, we learned about the Jollibee Commissary production line and its various functions. One interesting aspect discussed was the frozen Pattie burger line, which produces around 480,000 hamburger patties per day. These burgers are automatically frozen and prepared for the packaging process.

The second line in the production process is the Sauce Line, where sauce products are processed, including those for the popular Jollibee bestsellers like spaghetti and palabok. Here, the spaghetti and palabok sauce is made by mixing special ingredients and spices.

The third line is the Meat Processing Line, where the process begins for ground beef. Special spices are mixed in, and they also prioritize standard sizes and weight. Additionally, they ensure that the Jolly hotdog is processed to have a perfect taste and shape.

The Pie Line can produce up to 157,000 pocket pies in a 20-hour operating day. Currently, these pies are exported to Jollibee stores in Hong Kong, Guam, Saipan, Brunei, and the USA. The Pie Line was specifically designed for the production of peach mango pie. The pies are sealed in white colored plastic to ensure that their freshness, flavor, and shape are preserved.

The Bakery is responsible for making the special buns used in Jollibee’s burgers. They carefully monitor the consistency and texture of these buns to ensure customer satisfaction.

The Mari nation Line, the sixth in our chicken joy marination process, is specifically designed for our famous crispilicious and juicilicious chicken joy in the Philippines. We take great care to ensure that the marination process is thoroughly incorporated onto the chicken so that when it is delivered to other branches, all they need to do is deep fry it, resulting in a consistent and uniform taste. Additionally, we have implemented measures to prevent any waste from improperly marinated chicken. The Shanghai Line, which is dedicated to the special Shanghai meal process and wrapping process, was created. The numerous awards received by Jollibee’s commissaries demonstrate their commitment to high quality standards. For example, in 1997, the commissary in Pasig was recognized as the Outstanding Industrial Plant in the National Capital Region by the Laguna Lake Development Authority. Additionally, it received the Most Improved Industry award from the Sagip Pasig Movement. Furthermore, Romy P. Fernandez, the Commissary Plant Engineer, was honored as one of the Top Ten Most Outstanding Pollution Control Officers of the Philippines.

In 1998, the frozen patty line in the Pasig commissary received an ISO 9002 certification from the SGS (Societe’ Generale Surveillance) Yarsely, an international certification body. The company’s vision is to be admired for its agility and innovation, striving to be number 1. Lucky Me has been serving Filipinos for two decades and remains consistent in providing high-quality products like Monde biscuits and Lucky Me noodles. During our visit to the manufacturing plant, I noticed that they treat us all equally, regardless of whether we are college students or not. The way they communicated with us gave off a children’s party atmosphere with amusing speakers and even a mascot named Lucy M which matches well with their product since it is specially designed for kids.

By coming to this place, you will experience joy and a feeling of being alive. Take the opportunity to see the captivating machine for making noodles, which performs various tasks such as cutting and packaging. I noticed that the workers are attentive in ensuring that the mixture is accurately placed on the appropriate slide, as it directly impacts the weight and texture. This shows that they depend not only on the machine but also on proper supervision. Failing to do so could lead to wastage, which has negative consequences for production.

The production cost will undoubtedly increase. In the last step, they demonstrated how to make noodles, which was helpful for us to get an idea instead of solely relying on our own imagination. Monde Nissin Corporation, despite its name, not only produces noodles but also biscuits. Their processing and manufacturing facilities are efficient and reliable. Prior to shifting to noodle production, their first products were biscuits such as Nissin wafers, Snitch, Voice Combo, Butter Coconut, and many more. They process, pack, and seal high-quality biscuits and a variety of noodles. They continuously study and improve their system, never limiting themselves to the same processes or machines. I also noticed that their citations and manufacturing plant are ISO 9001-2000 certified. I am amazed by this company due to the humility, simplicity, and cheerfulness of their workers, which creates a relaxed atmosphere. They continuously strive for excellence in marketing and distribution as well.

No wonder the product and its promotion have attracted a large number of people due to its useful benefits. This is because the product caters to everyone, regardless of their lifestyle. During my trip, I gained insights into the production process, the importance of timing, the significance of worker cooperation and coordination – which are vital attitudes, and ultimately, I recognized humility as the key to success for everyone.
